Lime & Courgette Cake Recipe

For the past year or so i've really gotten in to baking, I love discovering new recipes and then changing a little something to give my own twist on it. At least once a week I like to bake a cake. About six months a go I was in a cafe where they were serving Lime & Courgette Cake. My dad bought it and I had a small bite whilst slightly hesitant particularly about the courgette part, vegetables in cake? huh? But oh my goodness I was totally swayed. It was so yummy and about a week later I wanted to create the very same yumminess. Here is a recipe for you to try.

You Will Need:

3 Medium Eggs
125ml Vegetable Oil
150g Caster Sugar
225g Self Raising Flour
1/2 Teaspoon Bicarbonate Soda
1/2 Teaspoon Baking Powder
250g Courgettes (Finely Grated, works out to be about 2 Courgettes)


400g Cream Cheese
175g Icing Sugar
2 Tablespoons Of Lime Juice
40g Pischasio Nuts (Bashed, Or Finely Chopped)
1 Tablespoon Of Lime Zest

The Method:

Preheat the oven 180 C, 160C Fan or Gas 4.

Grease and line 2 21cm sandwich tins, or if you only have one just use this and then cut the cake in half when it is cooled. (This is what I do)

Beat together the eggs, vegetable oil and sugar in a large bowl until creamy. Sift in your dry ingredients. (flour, bicarbonate soda and baking powder) and beat until well combined. Stir in your grated courgettes, do this by hand rather than an electric mixer.

Divide your mixture in to the two tins or one.

Bake in the centre of your oven for 25 to 30 minutes or until a skewer comes out clean.

Remove the cake from the oven and turn on to a wire rack and leave to cool.

With regards to the icing, beat the cream cheese in a bowl until smooth. Sift in the icing sugar and stir the lime juice in. 

Use a knife to level the cakes and evenly disbute the icing between to sandwich the cakes and use the remaining tocover the top of the cake. Sprinkle with the pistachios and zest.

And ta ra you have yourself a delicious cake to wow your friends and family!
